Instant Pot Chicken and Pork Adobo

The classic Filipino dish, Adobo, cooked in the Instant Pot

Ingredients
  

  • 1/2 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 1 head garlic minced
  • 2 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 tsp black peppercorns cracked
  • 3 pcs dried bay leaves
  • 1 pc onion sliced in rounds
  • 1 lb chicken
  • 1 lb pork cut in squares
  • 3 tbsp pate

Instructions
 

  • Mix vinegar, soy sauce, garlic, olive oil, brown sugar, cracked peppercorn, and bay leaves in a bowl.
  • Put onion slices inside the Instant Pot to cover the bottom surface.
  • Place pork and chicken on top of the onion slices and pour the sauce mixture over it.
  • Close the lid. Make sure the pointer is in the sealing position. Set Instant Pot to pressure cook for 10 minutes. Once done, let the pressure naturally release for at least 15 minutes. Then quick release for the rest of the pressure.
  • Turn on the broiler oven and pre-heat for 10 minutes.
    Remove the chicken and pork from the Instant Pot and place on a baking tray with wire rack. Broil for 10 minutes or until chicken and pork turn brown.
  • Meanwhile, put the Instant Pot on "saute" mode and place the whole eggs and pate inside. Take out the eggs after 7 minutes. Make sure the pate is mixed with the vinegar-soy sauce mixture.
  • Peel the eggs and cut into slices. Assemble the dish by placing a chicken, some pork, eggs, and rice in a plate. Spoon sauce over the top. Serve.
